Where has the time gone?

Ha... so the last time I posted anything was over a year ago. I guess my planning of blogging about wedding planning wasn't all it was cracked up to be. But, long story short - everything came together and we had a lovely and fun wedding.

It wasn't the most perfect Fall day, considering the week of had been GORGEOUS, but at least it didn't rain or snow. Everyone had a lovely time and now we've been happily married for almost 8 months. Time has flown. We took a belated honeymoon to the Dominican Republic in February, to both of our first all-inclusive. Definitely the way to go, and we had a blast. We really didn't know what to expect but it was all good. I had said that we'd go someplace that we may never get back to again, but it was fun and I think we'd definitely consider it! It was so nice to just relax on a beach, listen to the ocean while reading a book (and people watch!) for a week. The food was good, entertainment was good, and drinks were great.

Next up on the list is expanding our family, but the details of that are still being discussed. A lot of planning goes into this, but I am ready. But until then, I will enjoy my newlywed status for another few months. I suppose I can always focus on what we should do for our 1-year anniversary. :)

The Registry

Ah... new things. New shiny new things. New things that we didn't have to purchase ourselves! It's the excitement of registering for gifts. I hope to have this done by the middle of June, and in the mean time have been searching lists and lists of what we should be registering for. So that got me thinking - what do you register for?

All of the lists out there seem to think that you need so many of this, and so many of that. Who needs 6 lamps, fine china, or fancy napkins? Obviously someone! When the FI and I merged our things last summer when I moved in to his already furnished house, we went through each others things and determined whose duplicates of measuring cups, measuring spoons, eating utensils, water pitchers, etc. would stay, or which ones would be donated/thrown out (we did donate a TON of stuff). It was due to the fact that I had been living on my own for 9 years prior to that, and the last 4 years in a condo that was 98% furnished. Needless to say, there was a lot of stuff.

After reading through these lists... it became more and more clear that maybe we really just needed to upgrade some things. I know he would love for me to have a Kuerig, as my current coffee maker (still in a great condition) would always make a mess of the water when I was done, and a Kuerig would solve that. I had been looking at new comforters/bedding for awhile, so maybe this was the time to get that. Of course, I was looking WAY before we got engaged - so luckily I never bought anything. Brand new towels for the bathrooms would be nice, as ours are just a collection of what we both had prior - as long as they were in very good shape. Other small kitchen appliances would be nice too, like a good food processor or small crock pot for dips. I'm sure I could come up with other examples too.

And... a honeymoon fund. I read countless posts on Wedding blogs/message boards and the consensus is - DON'T DO IT. But I think, why not? Some of these people are the same ones who feel that it's tacky to have guests pay for drinks and that an open bar (or no bar at all) is the only acceptable route to go. Seriously? Maybe in some places, but I'm pretty sure that no wedding I have ever been to has had people complaining about the fact that they have to pay or drinks. To each their own, I suppose. Anyway... we have been discussing possible honeymoon vacations (St. Lucia), and it would be nice to get the money to go there, even if it's in cash. I know asking for straight up cash is rude... but I guess when you have a registry that doesn't have a ton of options on it, people may get the hint to go that route. Gift cards would work too, and with the way I spend money at Target - greatly appreciated!

So, in conclusion... you wouldn't think that a Registry would have to have so much thought put into it... but you do. Getting to the store with the power of that scanner in hand - anything is possible! Heck, I had a friends now husband scan in some mac and cheese boxes - ha! Hopefully we can have a game plan going on before we enter said store(s) - and some store browsing and note taken may need to begin real soon though. If something is forgotten, if can always be added later.

Play that funky music!

It really was never a debate. He wanted a band, and I just wanted to make sure that certain songs were played. Ya know, the first dance, mother/son & father/daughter, and maybe a fun wedding party song. After reaching out to a band we saw at another wedding dance a few months back, we figured we'd see if they were available. If yes, great. If not, time to figure something out.

Well, they were available and their cost wasn't AS much as we had originally thought. Which I guess was good and bad. Would a DJ be cheaper? Probably Or should we just go for it and have a great time to end the day festivities?

After confirming that they'll be able to play whatever songs we want during dinner, being able to play all of those "traditional" dances, and getting done 15 minutes before we get kicked out of the reception hall (to play two night ending song) - we booked! I can definitely say that I am excited, as it will be something we can look back on and say that we did. Yes, a DJ does have some perks... but a band is just plain 'ol fun.

Oh, the bridesmaid dresses got ordered last week! One more thing to cross off the list. I think each of the two will look great together, and the blue will look really nice. They're supposed to come in sometime in August - so here's hoping!

So, now I can say that the following has been done:

  • Reception venue
  • Ceremony venue
  • Officiant
  • Photographer
  • Band
  • Wedding dress
  • Bridesmaid dresses
  • Wedding band
Time to focus on some little things before getting to more major things in a few months. Next up - invitations!

Making it Official

We met with the Officiant last night, and were really impressed. She was really nice and seems very "go with the flow". It is awesome that we pretty much get to customize how our ceremony will be in terms of what is said and the length. He is thinking less than 10, but I am hopping for at least 10 to make it a little bit more memorable. But, we'll see what gets played out.

She gave us examples of readings, verses, vows, unity items, and more to use. We mainly just have to go through the material and pick which ones we want, or if we like a couple - we can combine and she'll make it work. I love that.

Ya know, I never mind sitting through a wedding ceremony... but it always seemed to go on forever when the pastor/priest did the sermon. I know that's nice and all, but to me - it's not needed. Let us do the other stuff, skip a sermon, and make it official. She is pretty much doing that.

In other news, we sent the tentative booking information to the band we're getting... so that is exciting. The whole time we have thought about doing a band instead of a DJ. For one, everyone does DJ's and sometimes the cheesiness that they bring can be too much (inflatables, feather boas, games, etc.). We have seen this band play before at wedding receptions and enjoyed that all they did was play music - and good music. It's also nice that they are able to play certain songs that we want (like couples dance, father/daughter/mother/son), as music is important to me. I think they'll do a good job to cap off the celebration. We both have a lot of friends that dance, too.

Next up - Flowers, Cake and the little things. Oh, and maybe some engagement pics too.

Say Yes to the Dress... for reals!

After visiting 7 stores (yes, 7), and trying on countless dresses in the style I was looking for - I found "the one"! It was actually at Store #3, and after trying it on... I knew I loved it. It fit well, gave me the amount of curves I wanted and had other features that I was impressed with. And the bonus - it was under $1K!

There were 2 other dresses that had caught my eye as well. One was almost too basic, but still very nice on me (and great price, too). Plus, the store owner was great to work with. It kind of made me sad that I didn't get that dress based on the service alone... but I would consider going there for other things (like jewelry). The other was amazing with features (thinner v-neck straps, lace with a Swiss dot lace underneath, small belt, small keyhole back, corset tie in the back), but it was WAY over what I was wanting to pay. Had it been maybe $1,200 instead of $1,500, I would have justified the cost - as it was a nice dress and also fit me really well. However, the size I tried on was way big, so I wasn't sure that once I ordered the dress in my size, that it would still be as flattering. In addition, this place did not allow pictures and cut the tags out of the dress, so I wasn't able to locate in online to view a zillion times to make a decision.

I am happy with my dress, and can't wait until it comes in... in like 4-5 months. Now I'll be on the hunt for jewelry (thinking pearls), shoes and a veil. The store I got my dress at gave me a $150 store credit, so that can be at least used for a veil - which may have some subtle bling since my dress won't have any of that, which is OK actually. It's nice to have that decision out of the way.

I have also decided on a bridesmaid dress color - Mediterranean Blue according to Alfred Angelo. They're about 10 different long styles dresses to choose from, so finding a flattering style should be easier. I asked my sister to be my MOH when I saw her a couple weekends ago, and then asked Blair's sister last week to be my bridesmaid. Her and I went dress shopping last night, and she found a very flattering dress at a local store. My sister plans on going this weekend to find a style that will suit her. Good deals!!

We also booked out photographer, and I am very excited to work with her. She does weddings, engagement shoots, and families. I know a few people who have used her for family pics, and she has nothing but great reviews... so that is nice. Next week we meet with our Officiant and will hopefully have her booked. Then next will be the band. :)

I am happy that all of our big things are coming together. It's been a very productive couple of weeks.

Say Yes to The Dress

OK... so not yet... but it has started!

I went to my first wedding dress appointment yesterday and was partially nervous, but also excited. I know the type of dress I'm looking for and know that I don't want to spend a ton of money, so that helps some. It's also nice to see what some of the dresses look like on and in person than what I may have seen online. What a difference!

I was mainly looking for lace, but did opt to try on some satin ones as well. The satin ones weren't horrible, but boy were they heavy. There was one that wasn't so much, but I just feel like I would be carry around that extra weight all day/night and want to be free to move.

I ended up really liking a couple, although a few others could have been added to that list as well. It was my first time, so I was open to a lot - as long as it was in the style that I was looking for. The two that were written down each had their own pros and cons.

#1 - The Good: just enough lace, a great v-neck neckline, fit loose but was still form fitting, and very lightweight. The Bad: low back, so not sure what I would do with a bra, and the slip underneath sits weird in the chest area (but could have just been the size too).

#2 - The Good: fits AWESOME (fits my body perfectly), has a nice corest that would hold up to anything, just enough lace, not much for alterations, and not heavy at all. The Bad: strapless and isn't able to get straps.

Both are the same price, or relatively close. They are also both a tish above the maximum price range, but the first one is on a 25% off sale too... so that is a bonus. I have another appointment tomorrow with a small boutique in town, and plan to call 3 more places for next week before another appointment in St. Paul next weekend. They all have about the same designers, but it'll be nice to see what is all out there to make a decision.

In other news... our venue for the reception gets booked on Monday!!

Some progress!

We have a meeting with one of the venues today, mainly to get more details about the information we got and to ask any questions we may have. We are aiming for an October wedding, and this place had some more dates available compared to other places... and is a little cheaper for what they offer. Besides the normal rental fee and food and beverage minimum, the included offerings aren't horrible and the only thing we'd need to pay extra for (besides late night snacks, a keg and some punch) is having some audio/visual for a slide show.

Some places didn't include the cutting cake service, or included that in an a la carte option for a couple hundred bucks. Seriously?! Other places offered a lot of additional decorations, but really... I just want something simple so whatever is included in the wedding package is fine by me (mirroed tiles and some glass cylinders and floating candles).

So, I am crossing my fingers that the date we want (or I want... and both moms would like to see a Fall wedding) is still available and we can put a deposit down and make the date official. Big step! Next up will be figuring out what we want to do for a ceremony (if we are not able to rent a smaller room at the reception venue), and then work on the music and a photographer.

I have also scheduled a couple appointments to try on dresses in town here, and then another place in St. Paul next weekend. That place is supposed to have a lot options, so I am hoping I can find something I like and is still affordable. Yes, I want a nice dress but it doesn't need to be super expensive. Hopefully trying on dresses will be just like 'Say Yes to the Dress'!

I am happy that things are starting to roll, especially since this wedding is a little less than 7 months away. I have had plenty of friends do it in less time, and their wedding festivities were great. Once the main things get booked (reception, decision on ceremony, music and photo)... the rest will be easier.

Venue Selections - such a choice.

I requested a bunch of information (pricing, availability) from various venues in town to have our reception. We agreed that having it at a hotel would be best, that way people staying at the hotel can stay there instead of driving. Yes, it would be their choice to drive - but, this is what we want. So far, after combing through every detail and comparing every detail... not one of them stands out as a front runner. It's weird. I know that we only have 3-4 places in town, and most give you a lot of options for food, decorations, and additional inclusions... it's almost like you need to preference what is more important to pay for over another, and hope the place you pick in the end is giving you the bang for all the bucks.

Pick #1 - It's had receptions forever, and I have been to many, as well as other non-wedding events. I'm sometimes impressed with the food, and other times not. The good thing, is that if you don't want to pay for the single shot mixed drink inside the Hall, you can always go to the Bar located within the hotel and get the same drink (more alcohol) for the same price. Will some people do that? Maybe. The place is also outdated compared to some others, so that's another thing. However, the list of inclusions is awesome and gets my vote for that. You can also have the ceremony, for a fee. What doesn't get my vote? The choices for plated dinners, which is the most expensive. Their buffet options are better, but again, more expensive. Oh, and there is plenty-o-parking.

Pick #2 - I've also attended many weddings and other functions at this place. It's nice, it's roomy and has plenty of parking. At first, reading through the information.. this places wasn't bad. The prices were right fr the food, and were the least expensive. The inclusions were alright, and would do for what we would need. Unfortunately it would be another $1K to have the ceremony there, so that was a bummer. BUT, even with estimating costs and gusts, including the ceremony (and audio/visual) is still cheaper. Funny, how that goes.

Pick #3 - This is my top pick. I have loved every wedding reception I've been to at this place, and have loved every other function I've gone too as well. The food never disappoints and its’ newer, so it looks nice. The main downfall is parking – the lot is small. The pricing is comparable on all aspects, but doesn’t include a ton of stuff like Pick #1. They do have a separate package that you can get for $1K, which includes some stuff that’s needed… or do a la carte for those items if you don’t need/want them all. A ceremony is also possible, and for a decent price. Plus, buying that package allows you to take $1K off the F&B minimum. So, it’s something to think about.

Pick #4 – A very new hotel. So new, that it’s not even completed yet! My dad told me about this place, so I called the General Manager up and had a lovely 10 minute conversation with him. The only information he had was the pricing, which wasn’t horrible. It stinks because until the food pricing comes out; I can’t really include it in my venue choices. Plus, I’ve never been there, and although the 3D images that he supplied looked great, you just don’t know. He offered a tour sometime this month, so we’ll see.  If the price is right, it could definitely be a contender.

Decisions, decisions.! I’m on the right path though, and hope to get a venue narrowed down within the next few weeks… and crossing my fingers that whatever day we decide will be THE day, the place will still have an opening.

Ah, I'm getting married!

When I started this blog, it was kind of a rambling of random stuff - recipes, venting sessions, some life events, and just whatever was on my mind. I always thought that when I'd get engaged, I could turn it into a blog of what was going on with everything involved in planning - so that it could all be documented in some way. And... now I can!

Blair proposed on Saturday,  February 15, 2014. It was over at his sisters place and his 2 nephews were involved - which I knew they would be in some way, shape or form. I started a Wedding Website and included this information about the proposal:

After an already fun-filled day of going to the Kiwanis’s pancake feed and wandering around Costco with my parents for a bit, we headed over to the Keller’s (Blair’s sister Alison and brother-in-law Travis) house around 3:15 or so. We were asked to come over earlier than everyone else who was coming over so that we could get a start on the pizza order, which was our supper before we headed to the Fargo Force hockey game for our annual party there. When we got there, I thought it was weird that the place was really quiet, as usually the kids come and greet us at the top of the stairs… but I guess that wasn’t so unusual. Travis greeted us and said that the boys were in their room while they were getting ready and would be out in a few minutes.

All of the sudden, Owen and Dylan come out dressed to the nines in super adorable suit and tie outfits, and Owen was carrying a gift bag. Blair ushered them over to the living room and had Owen give me the bag, saying that the boys had a present for me. I was told to open the bag, and once I was able to sort through all of the tissue paper, I found the silver box at the bottom.  At this point, Blair was down on one knee, holding the boys on each side of him. I looked at him, and he told me to open it.  I proceeded to open the box and saw the beautiful ring. He told me to put it on and asked, “So what do you say?” I then asked him, “Well, what are you asking me?” “Will you marry me?” I responded with a, “Of course, yes I will!” Then I got hugs from the boys and kissed my fiancé!

We spent the rest of night at the hockey game and Gastropub with family and friends – which was a perfect ending to a perfect day!

I was very surprised, as we had gone and looked at rings a few weeks back... but didn't know when it would happen. Well, sooner than I imagined. Needless to say, I am excited and couldn't be happier.

Here's a pic of the newphews with us after it happened. They were adorable!

He's my lobster. :)

Floor problems

Today would have my home closing day, but I was right with gut feeling and the buyer walked. I think I was more mad that the process took SOOOOOO long (a month!), and had she done the inspection right away, the bad news wouldn't have come so close to the closing date. However, it is what it is!

After that news, we scrambled to see what our next step would be. Yes, we would have to fix the floor... but how much and when could it be done? Luckily over the weekend we were able to find a construction company that knows my BFs family and was in between jobs. They were also happy to have a job inside to avoid the heat (hello heat index of 105!). After doing an assessment, and advising on the cost - which wasn't as bad as what we thought it could be - the work was setup! They were able to start Wednesday (yesterday) and should be finished sometime tonight. We can't lay the carpet down for a week, but that gives us time to find someone to re-tack it all in, and also work on replacing the vinyl that was in my entryway. Silver lining? Yes and no, ha.

I feel like I'm in one of those DIY shows, mainly supervising. The place was all dug up at the end of their day yesterday,  but it will be nice to see the finished product sometime this weekend. I'll have to post some before and after pics.

I'm glad we were able to get it corrected so fast, as then I can get it listed back on the market faster. We had been called back by a few construction companies in town, but they wouldn't even be able to check my place out for a price quote until the end of September. I know they're busy with summer projects, but wow! Thankfully this all worked out.

Also, my realtor contacted the buyers realtor and advised that the floor was being fixed, so if the buyer was still interested they could certainly start up a new contract. So far, we haven't heard anything. Maybe it's just me, but if that was the only thing keeping you from buying this place and now that problem has been fixed (at a way cheaper price than what you had thought it would be)... it would almost be a no brainer to want to purchase it again. If not, hopefully someone else will.

Too good to be true?

In my life? This is usually the case. For someone who never really is lucky in anything (life, love, anything that remotely is beneficial)... I tend to have a negative aspect on a lot of things. I have tried to turn that frown upside down, but end up knowing better. Yes, some things do go in my favor. However, if I looked back on my life for the things that day - they would not even be close to the things that didn't go my way.

I recently put my condo up for sale, as I have moved in with my boyfriend (Big step!!). I pretty much spent all summer getting ready for this and was happy that the day was finally here. After starting off with a few showings, my luck turned bad and the deadbolt to my front door broke. Literally. You could turn the lock, but nothing happened. Unfortunately, this was discovered when someone was viewing my home and as I drove frantically over to my place to check it out - once I got there, I ensured the viewers that it would get fixed and what a fluke this was. It did get fixed that night, but it was still bad luck and looked poorly upon the value of my home.

Then, 3 days after my place was on the market, I got an offer. The buyer had their realtor call my realtor twice when they were at the house. My realtor felt confident that an offer would be placed - and it was! It was a great offer: $100 more than asking, paid in cash, closing date 4 weeks later, closing costs were average, etc. Things were good!!! Or so I thought.

This buyer waited the ENTIRE 10 days before they had an inspection done. This was last Friday. They then waited 3 more days to have their realtor contact mine to advise that they were concerned with the concrete that wasn't exactly level in the dining room. I had known of this issue, and questioned it when I had my inspection - but you trust what they tell you, and that was that they didn't think it was an issue. Alright, then. So, we went over to my place that evening and ripped the carpet up so they could go and check it out.... 2 days later. Seriously?!?

So now, this buyer wants me to give her money to fix the flooring. It's WAY over what it probably actually is - and everyone who has been asked thinks the amount is too high. We're hoping to negotiate the amount down, and pray that she doesn't walk away from the purchase. The closing date is a week from today. She was in a hurry to place an offer, but not in a hurry to get things done. Note to Buyer - Hello, when things take time - you should probably get your butt moving so you're not scrambling at the last minute to get things completed.

My gut feeling is that it won't work out and she'll walk away - but... I suppose I need to think positive. *crosses fingers*

Movin' on Up!

May seems to always be a month where everyone moves, and a month where I have found myself moving from one home to the next. Back in college, school was out and after the first two years, I always moved back home for the summer. The May of my junior year, I moved in with a co-worker/friend. The following May, I moved in with another friend. The May after that, I finally moved into my own one-bedroom apartment. I managed to live there for 5 years before buying my home, which I moved into in June.

The end of May is here again, and I am finding myself moving to a new home - while I merge my things with my BF's. It's a big step, as I have never lived with a boy before, and with someone else for so long in general. I am excited for the next chapter in my life to start, but also, afraid of losing the awesome independence that I've loved having for the last 8 years of my life. Yes, I've been in relationships during the time, but I've always had a place of my own to go to for my "me" time... and I loved  that! Now, I won't really have that option unless he's gone. I feel like Carrie from the one "Sex and the City"episode when her and Aiden move into her place, and she tells him she needs a good hour when she gets home to just be alone and do her own thing cos he'd get home and talk her ear off about his day and she just wanted some peace and quiet. I shouldn't complaint that much, considering I'm done with work at 3:30 and he's not done until 5 - so I will have plenty of "me" time to wind down on my own. It'll definitely be a change though.

My BF and are going to start moving some big things over to his place this weekend, and then slowly move everything else once my cat is in his new home. I am terribly sad to see him go, but know that I need to do this to get to that next chapter. I know he's going to a good home, and can at least check up on him every once in awhile. Parents of a co-worker of mine are taking him, so there will always be contact. He was my first actual pet. I say first actual because I had a betta fish for quite a few years named Oliver, who died in his sleep. I later looked up to see how long betta fishes lasted, and he did last the typical timeframe (2.5 years), so at least I knew I could keep something alive that long! Anyway, I told the BF that once Joe Mauer (my cat) is in his new home, I really don't want to be at my place since I won't have that ball of fur to cuddle with anymore. I also won't have him to greet me at the door, do his stretchy thing on the floor, and then proceed to give me "mama kisses" after I pick him up and carry him around for a bit. Man, I'll miss him!! I did tell the BF that when he dies (the BF), I'll get a new cat and name it after him... so, in about 40 years - I'll have myself a new cat!!

Again, it'll be a change. A nice change though. I am hoping we'll live in his house for a couple years and then we'll find something bigger and better that we can call "ours". Until then, it'll be his house with a majority of my things, ha. Eeek, I'm about to live with a boy!

Getting older

Tomorrow is my 32nd birthday. I am usually pretty excited for birthdays, as it's a fun time. And this time I should especially be excited since it falls on a Saturday and I have a whole day to celebrate. Yay?!

Some people hated turning 30. To them, that was old and they looked back at their life and realized that they either accomplished some stuff, or they didn't. In my eyes, I didn't think turning 30 was oh, so bad. Although I wish that my life had gone into a different direction than what it had turned out by that age, it was obviously meant to be and I came to terms with it. A new chapter in my life was just beginning, as I entered into a new relationship just a few months before. I was pumped to see what my 30's were going to show me, and maybe finally point me in the direction that my life was supposed to go all along. And it has, in a way.

I shouldn't be such a debbie downer about getting older, but when the age numbers keep increasing and your life is at a stand still of where you were 2 years ago... I can't help but feel a little sad about it all. I do love my life, that's not what I am saying. I love the life I have with my BF, my family, my friends, etc. I just want more. The years for child-bearing is decreasing and it gives me less time in life to share marriage anniversaries (that is, if dear BF and I get married anytime soon)... and that's the stuff that makes me sad. As he said once, we can't help what time in our lives we met each other, and I get that. And I understand where he is coming from by not wanting to rush things just because of our ages (he's 2 years older than me). But, the thoughts of wanting that family, wanting the bond of marriage makes me antsy. I'll probably never experience a 40th anniversary, let alone a 50th. Hopefully I at least make a 25th!

I can't complain, and I shouldn't. I am dating a great guy who would do anything humanly possible for me... no matter what it is. I am happy. I am happy with him. I am happy with us. I just want more, and won't lie and say I'm not jealous of my friends who are recently engaged, getting married soon, having more babies and buying new homes. I want that. I deserve that. We both do. It'll happen, one day.

Maybe when I'm 35... ha.

New Year.

Hello 2013. It seems weird to say that, considering 2012 seemed to just get into a good groove within the last few months. The year was a good one, with the normal ups and downs that most years have had recently. It was the first year that I stayed in town during the summer rather than going places most of the time. However, I think that was due to always having something going on that prevented me from leaving. Maybe this year, ha.

I rarely make resolutions for myself. I say that, not because I do not think that I couldn't handle them... but just that some expectations are too much to handle. It's like when they tell you to set goals, but set small ones at a time - and then one when goal is completed, start another. I tend to believe that so you can focus on something before getting side-tracked with another.

This year is different, as I wanted to set some resolutions/goals for myself. Some are just a continuation of what I have been doing, and others are things that I should be doing all the time and fail at it.

1. Be more frugal.

I like stuff. I like expensive stuff. I like to buy that expensive stuff. Time for change! I once may have called myself a shop-a-holic, and do continue in that manner today... but I am all about finding deals and saving money rather than buying something at full price these days. With the economy the way it is, businesses want your money. As a result, sales are galore and there is no reason why anyone (ANYONE!) should be buying something at full price. So, I have made a commitment to be frugal and only buy what I NEED, and splurge when the deal is right. I consider the Michael Kors purse that I plan to buy myself for my birthday an extreme splurge... but I do have a $50 gift card from Macy's and a $75 gift card from the mall that will go towards that... so it works! After that, no more for a long time or until some debt of mine is paid down.

2. Be more organized and clean

I'll admit it, I may not be the most organized person in the world. My house is a great example, but... when I need to find something, I can! :) Hopefully within the next 6 months (and I say 6 months because in order to get married in summer 2014, I need to be engaged in 6 months *wishful thinking*), I'll be selling my home and moving in with my BF. No move-in, with no ring. Ha. Therefore, I will need to super de-clutter my home and start to downsize things that won't necessarily be needed with the move. By starting now, I should have a good grasp on some better neatness when the time comes. I won't say that my home looks bad, or is terribly messy - but it could look a lot better if I just put some extra oopmh into it.

3. Read more books

I used to be a bookworm when I was younger. I'd stay up later than I should have, hide under the covers and pull out the flashlight to continue on whatever R.L. Stine or Baby-Sitter's Club book I was reading and couldn't put down. Holy suspense in them! *lol* Through high school my reading diminished, to the point where I bought the Cliffs Notes versions of many books we had to read for English so I didn't have to actually read. Go me. Then one summer I got into a "read the book/see the movie" thing, and that worked for some time. After the Harry Potter series was complete, I don't think I have finished a book since. Oh, I take that back... I read a Minnesota Twins history book last winter. #WIN So... more reading it is!

4. Continue with my healthy lifestyle

Health and Fitness. This is usually #1 on someone's resolutions list. It's 3rd on mine, only because I have a commitment to it already and want to continue with that commitment for 2013. This started back in March when I added a good core class to my semi-regularly workout routine. Then I amped it up to Zumba 2-3 times a week. It gets me to the gym, and I love it. In addition, my gym has added back a class I started going to in March (and through the summer), along with a couple other ones right before my regular Zumba classes. Bonus. So, this resolution shall continue. Plus, I like the fact that all of my clothes actually fit now... and fit well. Granted that's when you usually buy more clothes, but when your old clothes fit alright back then and not fit better - it's like having a new closet! Or... so I will tell myself that. Ha.

Happy New Year!!

Fall Leaves

I love Fall. I always thought I was a spring girl until a few years back when I realized I was more obsessed with everything that came with Fall than I was with the Spring. With Spring, at least the notion of warmer weather would be around the corner, an obvious reason why it can be liked by so many people. However, Fall is definitely the intro to colder weather around here... and you never know when that colder weather will happen. We got some snow last week, which pretty much shocked everyone in town, and I actually had to put socks on, instead of just throwing some sandals on for work. What a pain! *lol* But, Fall is still my fave. I love the scents mainly: cinnamon, pumpkin (pumpkin spice lattes anyone?), nutmeg, spice, etc. Everything brings good memories and makes me feel all warm and cozy. Plus, this year the colors on the trees have been phenomenal... so pretty!

I am always sad to see Summer go, especially this past summer. We actually had decent weather for once (still, no tan was received), so it was nice to be able to go outside and do things... or stay inside and enjoy the AC when it was just too hot. That usually was the case, which is probably why I didn't get a tan. details, details... I went on a couple road trips, spent a lot of time with my boyfriend and got back into a gym routine that I am still continuing now. August was a rather sad month, as I lost one of my Grandma's. I wouldn't say she passed away due to one thing, as it just kind of came on, and 17 days after she entered the hospital, she passed due to everything that had been infecting her body. It was definitely a hard month, but also a good month for bringing that side (my dad's) together and catching up with people I hadn't seen in years. I miss her every day.

But anyway, I think a lot of people start things over at the beginning of the year since it's a new start and they can focus on something for the next 12 months ahead of them. I think Fall is a great time to start things, as that's when school started and your mind is usually in that mode to pick new challenges up and work on them for awhile. As I mentioned, I have continued with my routine regimen since the beginning of the summer and love it. I do Zumba 2-3 times a week, and then hit up one day for regular cardio on the machine. I honestly get bored doing that cardio work now, but know I need to add some new things in so my body doesn't get bored. It's fun. I also have focused more on eating more whole foods than processed. I love my frozen lunches,  but for the last month I have been making meals in my crock pot to eat for the week and I just feel better about it. This week: Salsa Chicken in a wrap. Yum!

Now that it's October, Fall is certainly in full swing. Halloween is upon us and although I don't think I will be doing much for it this year, I still enjoy the time leading up to it - checking out the costume stores in town, or on websites to see what people are snatching up this year. The boyfriend's one nephew is going to be Po from 'Kung-Fu Panda'... he's gonna rock that costume like no other! And his little baby brother is going as either a giraffe or a puppy - which will be super cute!

Time to get out my boots, scarves, hats, gloves... and light those pumpkin and spice scented candles!

Music and Memories...

I am currently working on perfecting my "90's Summer Hits" playlist on Pandora and it played one of my absolute favorite songs: "The Freshmen" by The Verve Pipe. I have loved this song since it's debut in 1997, and although isn't a "summer song"... I allow it on my playlist because I love it so much. It also brings back a lot of memories from that time of my life - which is pretty common with any song I ever listen to. As hard as I try not to associate songs with certain events/life experiences... it is very hard and usually impossible. This song is a great example.

"The Freshmen" brings me back to my sophomore year in High School. It was currently in between winter and spring, and the group of friends that I hung out with listened to the radio like it was going out of style, we loved it! I am not sure why this song attracted me so much, but it still is one of my favorites today. Anyway, one of my good guy friends and I had started to taking a liking to each other around the time that it came out. There was this one Friday night, and a bunch of my friends and I were over at another friends houses just hanging out. It was getting late, and I needed to go but needed a ride since I didn't drive there (I didn't have my license yet). So my guy friend had driven there himself, and everyone suggested that he take me home. I shouldn't have been nervous about this, but everyone knows those butterfly feelings always happen when you're around someone you like! The drive wasn't very far, but we had some time. By chance, "The Freshmen" came on the radio and my only thoughts were, "If he kisses me goodnight during this song (we had kissed before), that's what I will associate it with and do I want that? Do I not want that? Oh... what to do, what to do?" The song was still on when we pulled into the driveway and that moment approached. I think I freaked myself out too much and pretty much rushed out of the car just to avoid the situation. Plus, I never knew if my mom would be staring out their bedroom window waiting for me to come home - as if I wanted her to see me making out with a guy in a car. *lol* So the kiss never happened during the song, but I still always remember this situation. Lesson: Although I didn't want to associate the song with that moment, I still do.

An actual relationship never happened between us (normal high school drama), but there was always this connection between us. I always considered him my high-school sweetheart that never happened, although we had plenty of chances. It's funny to look back at it now though. Him and I met up a couple years ago just to catch up, and the topic of us back then when we were young and 16 was talked about... including the "what ifs" of that timeframe in our lives. Silly? Probably, but it was fun.

Oh, the memories and the power of a song... who knew!

Recipe challenge.

I consider myself a healthy eater - maybe not 100% of the time, but I would say about 80% of the time. After doing Weight Watchers 5 years ago and losing almost 20lbs, it made me realize that some of the food out there was definitely not worth the calories per serving. For one, I loved any type of Helper (chicken or hamburger) growing up, but only getting a 1 cup serving of that stuff for about 8 pts. (when I was only allowed 22 a day) was not worth it to me. I haven't had one since. Along with some other stuff, it shed me a new light on what other things were out there that could give me the healthy decision and keep me on track to losing that weight. And losing that much weight was certainly a worth it!!

I just recently ordered a few new cookbook/recipes books recently. I am a devout follower to Spark People, and decided to order the cookbook from the site when it came out. Along with that, I have acquired a few Hungry Girl books as well. I have flipped through them all, and have decided that I will try a recipe from either book once a week. The one thing I love about the HG books, is that a lot of the recipes are a single serving. That works perfect for the evenings that I don't eat with my boyfriend and need to chow down on something on my own. And with most of the recipes having around 5 ingredients for each - even better.

Tonight: Hungry Girl - Stuffed Chick Cordon Bleu. Wish me luck!! :)

Baking endeavours

I think of myself a baker rather than a cooker. And granted it usually takes me a couple times to get something right - I find that baking has a less chance of this. Ha. Lately I have been obsessed with cupcakes, but since I would rather not polish down a Baker's Dozen myself, I refrain unless I have something to actually bake for or need a practice run just to be sure. Plus, baking is much easier to make into individual sizes than a big meal. When I was single, I never cooked for myself - as I didn't want to have the same leftovers for a week straight. It's strange, cos I could live a week straight on having cereal for supper... but that leftover lasagna bake? No thanks!

This weekend I made pumpkin spice chocolate chop muffins, and banana muffins. I hadn't originally planned to make the pumpkin spice muffins, but my BF's family was getting together and I figured I should make something for it. It's fairly easy - 1 spice cake box mix, 1 can pumpkin, 1 cup water, 1 egg white. You mix and dump into muffin pans sprayed with baking spray, cook the desired minutes on the cake box and there ya go. And it's pretty healthy too, something like almost 100 cal per muffin. No one ate them during the meal, but brought some with them on their way home. Success!

I also made banana muffins, with a couple leftover bananas I didn't get to last week. They turned out well, but I should have decreased the cooking time by 5 minutes. I will share below, and refer you to where I found it. I also changed a couple things, but have updated those from the original recipe.

Seriously Healthy Banana Muffins

Serving size: 12 big muffins (will have some leftover batter)

Ingredients
  • 2 very ripe bananas
  • 1/2 cup whole wheat pastry flour
  • 1/2 cup all-purpose flour
  • 1/2 cup regular sugar
  • 1/2 cup Blue Agave Nectar
  • 2 tablespoons light butter, softened
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 egg
  • 2 tablespoons unsweetened applesauce
  • 1/4 teaspoon salt
  1. Preheat oven to 350
  2. Cream sugar with butter (this helps to get all the butter blended smoothly!)
  3. Add egg, and beat lightly to get the mixture to fluff up a little.
  4. Add the 4 bananas, already smashed up in a separate bowl (a pastry fork works really well for mashing and mixing the bananas if you don't feel like busting out the mixer)
  5. Add the vanilla, and applesauce.
  6. Then add all the remaining dry ingredients and mix well.
  7. Pour mixture into pan sprayed with cooking spray so they don't stick! (12-cup muffin pan)
  8. Bake for around 25 minutes. You'll be able to tell it's all ready when the color is good and golden brown, or when a knife comes out clean from the center.
  9. Remove muffins or loaves from pans to cool on a rack.
 Happy Baking!

Triple D!

I swear I should make up my own "Diner's, Drive-Ins and Dives" like Guy Fieri on The Food Network. Since I started dating my BF, we have been to a few 'hole in wall' joints, all with amazing food. His grandparents like to go to these places, so whenever we go visit them and his parents (OK, so we mainly go so he can get his haircut and then do supper with them after) that is usually where we hit up. Last night we went to a place in Great Bend, ND (population 60, as of 2010) called Cow Gal's Saloon. It was a bar and grill, and I guess his grandparents just raved about the place so we figured that the next time we went down... that's where we would go.

The atmosphere was definitely a bar, and a small town one for that matter. The walls were covered with beer signs, old pictures, anything cowboy related, etc... definitely an 'American Pickers' dream. And the menu... I swear every person in that town could get something different - it was huge with a good selection of apps, chicken, steak, fish, soup, etc. I also look for the chicken entrees, whether it be a chicken sandwich or a meal and sides. It's usually a safe bet, and semi-healthy. I ended up getting chicken breast and swiss... which consisted of 2 small chicken breats, covered with a slice of swiss cheese a piece. I got the clam chowder and garlic mashed potatoes as my sides. We also ordered an app of chicken drummies in a cajun rub, and I had a couple of the BF's moms onion rings. All in all, very good... and I had leftovers for lunch today!

We even had our own entertainment, a few things actually. An older gentlemen was the singer singer of the evening, who was doing part karaoke and part off the top of his head - with guitar. He took a break for a drink and we think he ended up drinking a whole bottle of something with the way the songs were coming out in his second half. *lol* Also, the BF's grandpa was all about killing any fly that landed on anything near him. I think he managed to get 3 or 4 of them, and even one that landed in his drink. We told him he did that on purpose so he could get another drink. We all had a laugh.

I enjoy going to places like that, since they're usually one-of-a-kind. I think next we're hitting up a place in Mooreton, ND!

T > G > I > F >

Ah, another Friday is here. I feel like it was just last Friday and I was about to head off to the MOA to do a little shopping with my sister, then take in the fabulous sounds of NKOTBSB at the Target Center. Which by the way, was pretty awesome. What wasn't awesome? Having to get up early last Saturday and drive to Grand Forks. Ha.

As I have said before, this summer has just flown. I feel like I've kept busy but at the same time don't feel like I have done much. I blame work for getting in the way and cherish the summers I had when I was a kid. I'd get up just before the Price of Right was going to start, eat my breakfast downstairs in our "Nintendo chairs", then do whatever until noon for lunch and "Days of Our Lives". The afternoon usually consisted of watching some old school games shows on USA, playing outside or being involved in a variety of sports. Oh... those were the days.So easy,  no worries.

And now I have the Katy Perry TGIF song in my head. So catchy.
